I started with this recipe because it was awesome:

but I didn't really have any of the ingredients so I decided to improvise. I chopped up some onions and apricots along with an orange pepper. I added some lemon juice, garlic, salt pepper, and red chili pepper flakes. I let that simmer for a while and then set some aside. To the rest I added some brown rice and olive oil. I split the pork loin in half and gave it a little pounding to help flatten it out. I rubbed the pork with olive oil and salt and pepper and stuffed it and then tied it with the help of my roommate. I baked it at 350 for one hour (because Fruittart said so). While the loin was baking I simmered the reserved apricot mixture with water, some more lemon juice and spices, and some agave nectar for sweetness. I uncovered the loin, smeared on the simmered mixture and cooked for an additional 25 minutes or until the temperature reached 165. I let it rest and then cut into it. It is pretty good but not as good as the one made for small group by the Jedi Master Fruittart. Next time I will add more liquid, perhaps agave nectar, to the stuffing mixture to keep it from drying out. There are some who will go to a lower temperature on pork but I will not for food safety reasons.

On Frank Peretti

I just finished reading This Present Darkness by Frank Peretti. I thoroughly enjoyed reading this book. It was encouraging for my prayer life. If you ever feel like your desire to pray is waining then I recommend this book. Religious fiction can be tricky. You want to be doctrinally accurate without writing the same story over and over. I have not read any more Frank Peretti yet but I do at the very least recommend this book. It has been a weird last month. I feel that my pastor must have some insight into my prayer journal, the books I am reading, and the conversations I am having. Even random events have been pointing me towards the Lord and developing my walk with Him. We are continually growing in our walks but there are some periods where (I feel) the results are more obvious. I hope that you find the same things happening in your life. As things grow and pollen spreads, let those things point you to the Creator.

Thankful Thursday

Yesterday I helped my friend and prayer partner get ready for her move. Apparently, wives have to follow their husbands when they get jobs. I don't know what that is all about. As I stood in her library I was overwhelmed with a sense of loss. I can't explain it but I just realized how much I didn't want to say bye to her.
With that being said, I am going to try and think of things to be thankful about her move.
1. Her husband got a good job.
2. Philly is a fun city to visit.
3. They both graduated from here.
4. They were able to sell their house.
5. Philly has a baseball team.

Thankful Thursday

I am thankful that my finals are over. I had my last one this afternoon. I am also thankful that I feel okay about all of them. My law class was pretty intense but it has opened my eyes to areas that I could possibly serve in when I grow up. I want to say thanks to everyone who has helped me through my rough patches this semester. It means more than words can express. I thank you. My family thanks you.

Whatever your plans may be this summer: staring at soybeans, etc. I hope that you have a change to stop and enjoy God's creation and see the beauty in it.

Two Down, One To Go

So I just submitted my biotech law final. Yeah, I just submitted one 11 page single space document worth 100% of my grade. No freaking out here. He is supposed to send us a confirmation email. I told myself that I can't leave until I get it so I am obsessively checking my gmail and hitting refresh even though it does that automatically. My recommendation is that everyone should take a law class if they get a change. Just take it pass/fail. Don't do that to yourself. You don't get to enjoy the material as much.

We Haven't Had A "Thankful Thursday" in a while

I know there are good reasons why we have not had a Thankful Thursday but I can't wait for the next one. For those who are unfamiliar, this is a tradition started not by me but it is a chance to write about something you are thankful for.

This week I am thankful that God is sovereign because what I think will or should happen usually couldn't be more wrong or unfruitful. I am thankful that my headphones which were only playing in my right ear decided to play in both ears on the way home from school today. I am thankful that God provides the Holy Spirit to groan on our behalves because my words are inadequate. If you have read my blog, you are already very familiar with this fact. I am thankful for the promises in the Bible and the glimpses of God's character that are revealed in scripture and seen in everyday life. I am thankful that all things speak to God's glory.

My heart could just burst.
